The JOB:

The Kitchen Department Manager is also responsible for making sure the team meets kitchen targets, such as Speed, Food Quality, and Accuracy. They are also responsible from inventory management and stockroom maintenance.

As the KDM, communication is key to success. Weekly/Bi-Weekly, you will have a touchpoint with the General Manager to review the Kitchen Department strengths and opportunities. It is important

·      that key people department information is shared with your support team.

·      Review current business plan and current trends from the PEAK portal and restaurant score

·      card

·      Based on key areas of focus, determine measurable targets that support the overall business

·      (2-3 items max). Utilize the System Map signals to help you determine targets. For example:

·       KVS Times

·       Daily Food Safety

·       Hourly hand washing

·       Inventory controls (Code dates / adequate supplies)

·       Food Cost Management (Month end / Weekly Inventory)

·       Review / Adjust the plan and tactics to align with the business needs

·      Ensure the updated plan and tactics are communicated effectively to the support team.
